Every Wednesday, Susan Pierce Thompson, the founder of Bright Line Eating , puts out a weekly video blog. I’ll link to it below if you want to watch it.  The topic for the week was the place of Bright Line Eating recipes within the food plan.  This really piqued my interest.  In this prior post, I talked about how I’m learning to break away from the cookbook mentality but I started reflecting even more on this topic as a result of the vlog.  This is an important topic and it warrants a bit more time and energy, hence this post.

A 2 Ingredient Meatball Recipe

When I think of meatballs, I think of multiple proteins, breadcrumbs, a bunch of seasonings, and Parmesan cheese.   Some of the best meatballs I ever made were even mixed in my Kitchen Aid mixer.  Thus, I had low expectations when I first came across the Wildtree Garlic Salt Meatball recipe.  With just 2 ingredients, there was no way they could actually be good.

Potential Barriers to Eating Healthy – Convenience

I recently polled people regarding the biggest challenges they face when it comes to eating healthy.

The first response I got was this: “My biggest challenge is convenience… if it takes less time to pop a frozen pizza in the oven than make a healthy salad, the pizza wins.” – Emma

I can definitely resonate with that!  Breaking the frozen pizza habit was a challenging one.  I was even content with eating the cheapo pizzas so it was convenient and relatively inexpensive.  A very nice combination! Not buying them anymore proved to be the only effective way to stop eating them.
