When I think of meatballs, I think of multiple proteins, breadcrumbs, a bunch of seasonings, and Parmesan cheese. Some of the best meatballs I ever made were even mixed in my Kitchen Aid mixer. Thus, I had low expectations when I first came across the Wildtree Garlic Salt Meatball recipe. With just 2 ingredients, there was no way they could actually be good.
Kitchen Hacks – Keep That Guacamole Green!
Guacamole is delicious! I don’t eat it as much as I used to since changing up my food plan but when I DO make it, there are almost certainly leftovers because my portion size is limited. That poses a particular challenge: how do I keep it from turning brown?

This recipe, Lemon Pepper & Balsamic Chicken Thighs, is from the Wildtree Backyard BBQ Workshop Bundle. We baked it in the oven rather than grilled it. The mushrooms and green beams were seasoned with the same spice blends.

Chicken Leftovers Night
I enjoyed 2 different types of chicken leftovers tonight. We were happy we found an alternative to traditional breadcrumbs! We used Chickpea Crumbs to make the Wildtree Chipotle Ranch Baked Chicken recipe. The other chicken was seasoned with the Rancher Steak Rub.

Java Turkey Chili – Recipe

We made the Java Turkey Chili recipe from the Wildtree site. We used ground beef instead of ground turkey and added corn and riced cauliflower to increase the veggie content. We topped it with sour cream for our fat serving.
