When I think of meatballs, I think of multiple proteins, breadcrumbs, a bunch of seasonings, and Parmesan cheese. Some of the best meatballs I ever made were even mixed in my Kitchen Aid mixer. Thus, I had low expectations when I first came across the Wildtree Garlic Salt Meatball recipe. With just 2 ingredients, there was no way they could actually be good.
Kitchen Hacks – Keep That Guacamole Green!
Guacamole is delicious! I don’t eat it as much as I used to since changing up my food plan but when I DO make it, there are almost certainly leftovers because my portion size is limited. That poses a particular challenge: how do I keep it from turning brown?

Wildtree Wellness Product Launch – Wildtree Shakes

Wildtree releases new items a couple times each year and they never cease to amaze me with the thoughtful products they produce. Everyone I came across was a bit perplexed by the marketing campaign they started at the beginning of February. The timing was a bit unusual and they were teasing us with pictures of cacao beans, blueberries, and beets just to name a few. The reveal came on 2/15 when they announced the new line of Wildtree Shakes.

Potential Barriers to Eating Healthy – Convenience

I recently polled people regarding the biggest challenges they face when it comes to eating healthy.
The first response I got was this: “My biggest challenge is convenience… if it takes less time to pop a frozen pizza in the oven than make a healthy salad, the pizza wins.” – Emma
I can definitely resonate with that! Breaking the frozen pizza habit was a challenging one. I was even content with eating the cheapo pizzas so it was convenient and relatively inexpensive. A very nice combination! Not buying them anymore proved to be the only effective way to stop eating them.

My Bright Line Eating Staples

Just getting started? Be sure to check out my post on Bright Line Eating Reviews.
I started following the Bright Line Eating food plan 174 days ago. Once I made the decision to do it (as I wrote about here), I needed to figure out what I was supposed to eat. TGFA. As in, thank God for Amazon.

No More Cookbooks Please!

I have tried a lot of “diets” and if there was a cookbook available, I at least seriously considered getting it. I think the first I bought was the South Beach Diet followed by the LA Weightloss Cookbook. Several years later, I tried a 7 day intense cleanse and most recently, I bought the Fast Metabolism Diet Cookbook. Also in the mix was a neat book called “How to Cook Without a Book” which I highly recommend if you want to learn to cook more easily.
What is a picture worth?

I took to Instagram a few weeks ago as a way to share what I’ve been eating on my food plan and to get ideas and inspiration. I found that AND I also learned an important lesson.
There are a lot of people getting introduced to Bright Line Eating (www.brightlineeating.com) and there are more and more users on IG everyday sharing beautifully composed photos of tasty looking food. Check out #brightlineeating and #brightlinebites if you are curious. Some of the pictures look too good to eat.
Bustin’ Out at Rock Bottom

I remember distinctly the night I started the journey to recovery from my addiction to sugar and flour. I had gotten to the point, yet again, where I either needed to lose weight or buy new pants. It was time for a change and I was terrified.
I am not the primary cook in our house. In fact, if anything, my non-skills as a cook are often the source of jokes among us. It’s often that bad!
Then, in addition to that, we signed on as Independent Wildtree Representatives in April 2017. The convenience of our Wildtree pantry was all of a sudden called into question as I was ready to swear off a good percentage of the products in our cabinet.

This recipe, Lemon Pepper & Balsamic Chicken Thighs, is from the Wildtree Backyard BBQ Workshop Bundle. We baked it in the oven rather than grilled it. The mushrooms and green beams were seasoned with the same spice blends.

Chicken Leftovers Night
I enjoyed 2 different types of chicken leftovers tonight. We were happy we found an alternative to traditional breadcrumbs! We used Chickpea Crumbs to make the Wildtree Chipotle Ranch Baked Chicken recipe. The other chicken was seasoned with the Rancher Steak Rub.
